The delicate texture of this white flakey fish comes from pristine Patagonia waters of Chile. Patagonian Southern Hake is in the Hake family but differs is many ways from its distant relatives. The fish is much larger, with a large flake and mild flavor which has been substituted for a more economical alternative to Chilean Sea Bass.
It’s versatility can lend itself to pan fry, breaded, sauté, grill, bake or poach.
